On A Quest Chocolate Chip Cookies (Vegan and Dairy Free)

I love cookies.

I mean… I really, really love cookies.

In order to exemplify to you how much I love cookies, I will come out and tell you that I did, in fact name my dog Cookie.

So with that being said, I am ALWAYS in search of healthy cookie that tastes good and will not leave me feeling guilty for breaking my diet. Therefore, I created this recipe which, if I do say so myself, I am extremely proud of. It combines my two favorite things… cookies and Quest Bars! Proof that all good things do exist in the world!

What You'll Need:

-1 Chocolate Brownie Quest Bar

-1 can of chick peas, rinsed and drained

-1/2 cup + 2 tbsp almond butter (I like to go to Whole Foods or King Soopers and grind my own almond butter that way I know it is 100% fresh and there is no extra salt or additives)

-1-2 tsp vanilla extract

-1/4 cup honey (you could also use agave nectar, if you prefer)

-1 tsp baking soda

-Pinch of salt (if almond butter has no salt added into it)

Directions:

1. Preheat oven to 350 degrees.

2. Combine all ingredients into a food processor except for the Quest Bar. Blend well until mixture is thick.

3. Cut up the Quest Bar into small pieces.

. Add in Quest Bar pieces to mixture and gently blend for a couple of seconds. Be careful not to over-blend!!

5. Ball into small 1/2 inch balls and bake for 10 minutes. Cookies will be really soft and won't set like "normal" cookies but don't worry… they taste heavenly!

**For those of you who love cookie dough, you don't have to bake them. You can also make the dough into the 1/2 balls, and leave in the refrigerator in an air-tight container and eat as a raw cookie dough bite. This is also equally delicious!
