Healthy Pizza (Yes! It can be done!)

So lately, I have had a craving for pizza but the thought of all the extra calories from the salt, carbs, fat, etc, etc, always deterred me from taking a cheat meal that was so unhealthy for me. Thus, I decided to make my own pizza with a healthy and fresh twist. In this recipe, I made a cauliflower crust chicken sausage and loaded veggie pizza. YUM! However, get creative with it! You can add or subtract whatever ingredients you'd like :)

Ingredients for the Crust:

-1 Medium head of Cauliflower

-2 eggs, beaten

-2 cloves of garlic, minced

-1 cup of shredded cheese (see the "cheese" I used below but you can also use Mozzarella)

-1 tbsp dried oregano

-dash of dried red pepper flakes

Ingredients for Pizza Toppings (these are the toppings I used, but feel free to use what you like!)

-1 package of chicken sausage

-Sliced green bell pepper

-Sliced Onion

-Sliced Banana Peppers

-Artichoke

-Tomato

-Marinara Sauce (or whatever red sauce you'd like)

-Cheese (Mozzarella)

 

Preparation:

Preheat the oven to 400 degrees. Cut the cauliflower florets off the stalk and place them into a food processor. (You can also finely chop them by hand, if you don’t have a food processor). Process the cauliflower until a rice-like shape is formed.

Once, the cauliflower is chopped, transfer to a microwave safe bowl and place in the microwave. Steam in microwave for 5-10 minutes depending on the strength of your microwave. Once done, be careful removing it because it will be VERY hot! Next add the two eggs, minced garlic, cheese, dried oregano, and pepper flakes. Blend completely.

Once all the ingredients for the crust have been combined, drop the “dough” mixture onto a pizza baking sheet that you have previously sprayed with non-stick cooking spray. Because I didn’t have a pizza pan, I just used a regular rectangle shaped pan and made an oblong shaped pizza. Begin to flatten the cauliflower dough to the thickness you desire, or about the thickness of a thin crust pizza. Place the crust in the oven for 10-15 minutes or until the edges are slightly golden brown.

After the crust is finished cooking, spread your marinara sauce, cheese, and other toppings evenly over the pizza. Place the pizza back in the oven for an additional 20 minutes. OPTIONAL: You may add fresh basil to the pizza once removed from the oven.

Let the pizza cool for a few minutes, slice, and ENJOY!!
