Egg and Veggie Breakfast Sandwich

With a little extra time on my hands this morning, I decided to make a new and pretty tasty breakfast sandwich. Don’t be afraid to get creative in the kitchen, folks!

Ingredients:
-1 slice of whole grain toast
-1 egg, cooked over medium
-Tomato slices
-Spinach
-Avocado slices
-Dash of red pepper flakes and dried rosemary

Directions:
Cook egg as desired (I like to cook my egg over medium so that it’s not as runny as an egg over easy). Toast a slice of bread. Place spinach, tomato, and avocado slices on bread. Once the egg is finished cooking, add egg to sandwich and top with spices. Fold the two halves together and enjoy!
