Every Sunday, I spend between 3-5 hours in the kitchen prepping meals, cooking chicken/fish/turkey, slicing veggies, etc in order to prep for the upcoming week. My schedule is so busy, that often times when I finally get off work, I am too exhausted to cook. By doing all my cooking on Sundays, I ensure that I can eat healthy, convenient, and quick meals that will leave me feeling proud, not guilty for eating something I know I shouldn’t.
So this Sunday, I made a quick and easy asparagus and brown rice mix, that will be really easy to transport with me this week.
-2 tablespoons of olive oil
-1 Bundle of asparagus
-1/4 cup of chopped onion
-1/2 tablespoon minced garlic
-1 diced jalapeño (optional, if you like spicy things!)
-Spices (I used oregano, dried rosemary, and red pepper flakes)
-1 Cup of Brown Rice
Chop up all the veggies, mix in minced garlic, olive oil, and spices. Place in a skillet over medium heat. Sauté veggies between 4-7 minutes, depending on how you like your veggies cooked. Meanwhile, place 1 cup of brown rice with 2 cups of water into a sauce pan over medium-high heat. Cook rice until all the water is absorbed. Once both the rice and veggies are cooked, place the veggies over the rice and enjoy!
This is a great and quick meal I will take one day for lunch and pair with a couple pieces of chicken that I also baked this weekend. Meal prep and cooking healthy doesn’t have to be overly complicated or take a lot of time. It just takes a little planning and the desire to eat healthy… despite a busy schedule!
